"Hobo Dinner"

After a discussion at work about my recent Pinterest dinners, a coworker suggested I make what he calls "Hobo Dinner". It sounded easy so I thought I'd give it a try...it was good! I used the ingredients it called for, but I made 2 mini dinners so that we could personalize to our own taste.

What You Need:

-Tin Foil
-Pam
-1 lb Beef Cubes (like what you use for stew)
-Soy Sauce
-Dry Rub (or other preferred seasoning)
-Red Potatoes, Chopped
-Baby or Sliced Carrots
-Onion, Chopped
-1/4 stick butter, sliced


Directions:

Get a decent size piece of tin foil & spray it with Pam. Put beef cubes on the bottom (mine were previously marinated in soy sauce), sprinkle with dry rub. Top with chopped potatoes, chopped onions, baby carrots, & sliced butter. Wrap it up in the tin foil (I put an extra wrapping on in case it leaked). Place it on the grill on low heat for 45 minutes-1 hour.

Some Culinary Adventures, Courtesy of Pinterest!

Needless to say, the husband has been getting spoiled with these recipes the past couple weeks! I took to Pinterest again this week to find some new stuff to make. I've been having a lot of fun with it AND my crockpot is enjoying being used again! Here are some of my recent recipes:

CROCKPOT BBQ BEER CHICKEN &
LEMON DILL ROASTED POTATOES

Lemon Dill Roasted Potatoes

I really really liked this dinner! The potatoes were really yummy, probably my favorite potato recipe yet. The BBQ was really good too. The only thing I did different than the recipe is I only used 24oz of BBQ Sauce, I didn't add the additional sauce at the end. I felt like it was plenty of sauce as it was.


CROCKPOT CHICKEN & DUMPLINGS




This was good too! My only recommendation would be to let it cook longer after adding the biscuits, as some of mine were still a bit doughy. It smelled delicious & tasted better. There will be plenty of leftovers if you're making this for 2, which is great for tomorrow's lunch!










CROCKPOT JAMBALAYA & MINI PESTO ROLLS


I made the jambalaya as the recipe called for except I used 2 packages of Garlic & Butter Rice instead of 1. It made enough for 4 people + leftovers. I used a package of 8 Pillsbury crescent rolls for the mini pesto rolls. The 1 package made 21 mini biscuits. They were awesome!



BLACKENED TILAPIA WITH ROASTED GARLIC BOWTIE PASTA
 



I don't have a linked recipe for the blackened tilapia - we just took tilapia and blackened it using Blackened Redfish Magic seasoning and a cast iron skillet on the stove top. For the pasta, follow the recipe above - it called for chicken, but we used fish instead. Use whichever you prefer!



CROCKPOT TOMATO-BASIL PARMESAN SOUP
 


This was pretty good, but not as good as I was hoping. The husband really liked it, but I just couldn't finish my bowl. I feel like maybe if we made it as a side to go along with grilled cheese or something, it'd probably be better. I made it as the main dish, so it was a little too...??...for my liking. I wish I knew what it was about it so I could maybe fix it, but the only thing I can think is maybe it was the cheese. Next time (if there is one), I'll try 1/2 cup instead of 1 cup. We'll see if that makes a difference!

Pinterest Dinner Week!


So, this week I decided to make a bunch of the recipes I've pinned on Pinterest. There are so many good ones, but I picked a few of my favorites & made up a menu. Not only did a menu make grocery shopping MUCH easier, but it was nice to get home from work & know exactly what I was going to make. Plus, I think the husband is pretty excited about all these new dishes! ;)
 
Cilantro Lime Shrimp & Rice


This was probably my favorite meal of the week. I love cilantro so that was an easy win, & the lime isn't overpowering at all so it's a nice compliment to it. The rice is actually their version of Chipotle's rice, & I think it tastes pretty similar. It's pretty easy to make & I'll definitely be making it again.



Crispy Honey Mustard Chicken with Roasted Green Beans
 

Tuesday, I made this chicken & green bean dinner. It's baked, not fried, so it's healthier for you! I loved the chicken, but be careful if you try to make it - it takes longer than 15 minutes to cook. It had great flavor & I'll definitely make it again. The green beans left something to be desired, but maybe with a little tweaking it could be better. If you find something that works, let me know! ;)




Parmesan Crusted Tilapia with Asparagus Parmesan
 


Wednesday night brought Parmesan Crusted Tilapia with Asparagus Parmesan. Again, not thrilled with the side dish. I definitely won't make that again, but I hope to find a really good asparagus recipe soon! The tilapia on the other hand, was really good! It didn't take any time at all to cook and it was awesome.





Spicy Chicken Rigatoni

Thursday night I got home late from work so I was happy to see that this didn't take a lot of time to put together. I hated the idea of ruining my week streak of Pinterest dinners - haha! This was pretty good, but not what I expected. First off, it's definitely spicy. I love spicy food, & this had quite a kick. I also put extra crushed red pepper on mine, which added a lot of the spicy flavor. I probably wouldn't make this again, or if I did, I'd tweak it a little. I will say too though, that my picture doesn't look like the picture on the website. I followed the recipe perfectly (except we left out peas), but their picture looks a little more creamy alfredo where mine looks more marina based.
